Gluten free Coconut Bars

For those gluten sensitives out there, here is a recipe that you may want to try. These coconut bars are packed with protein and fiber, not too sweet and healthy to boot!  Fast and easy too!  You can leave out the cocoa to make them blond and they are just as good ; )


3 eggs
1 cup coconut milk
1/3 cup coconut oil
1/3 cup honey
1 T. vanilla
1/2 cup almond flour
1 T. coconut flour
1/2 cup coconut
1/4 tsp. salt
1/4 cup dark cocoa

Combine cocoa, flours, salt and coconut.  Mix remaining ingredients until blended and combine with flour mixture. Pour into 9x9 pan and sprinkle with more coconut if desired.  Bake @ 350 degrees for 30 minutes.  Cool before removing from pan.  Enjoy!

A special note regarding the coconut! 
Wanted to warn you regarding processed coconut from the grocery store.  If you look on the ingredient listing on the package, you may see an additive propylene glycol.......this is antifreeze!
 It will kill your pet, so why would they put it in food to poison you?!  Better to get your coconut from the health food store and eat safe!
